- 1 potato, cut into small pieces
- 1 onion, sliced
- 3 mini sweet peppers, cut up
- a few slices pickled jalapeños
- 5 shishito peppers, whole
- to taste garlic powder
- to taste taco seasoning
- to taste Italian seasoning
- drizzle olive oil
- 2 slices bacon
- to taste Mexican-style shredded cheese
- a dollop or two, per serving sour cream
- a few tbsp, per serving feta
Instructions
- Cut up 1 potato into small pieces and spread on a sheet pan.
- Cut up 1 onion into slices, sprinkle over the potato.
- Cut up 3 mini sweet peppers, add to the pan.
- Add a few slices of pickled jalapeños.
- Add 5 shishito peppers (whole).
- Season with garlic powder, taco seasoning, and Italian seasoning (to taste). Drizzle with olive oil and toss.
- Bake at 400°F for ~25 minutes.
- Top with 2 slices of bacon, bake 10 more minutes.
- Top with Mexican-style shredded cheese, bake 10 more minutes.
- Split in half and top each half with a dollop or two of sour cream and a few tbsp of feta.
