Corn and Roasted Red Pepper Summer Salad

I forgot to take a photo after I mixed it all together!

This is my latest hyperfixation "salad". It's perfect for when you're feeling lazy but still want to get your fiber in :)

Ingredients

  • 2 cans sweet corn, drained
  • 1 cup reduced fat feta cheese crumbles
  • 2 bell peppers
  • ¼ cup pickled red onions
  • ¼ cup chopped cilantro
  • a handful cherubs tomatoes
  • 2 tbsp taco seasoning
  • to taste salt

Instructions

  1. Cut the peppers into quarters and place them flat on a baking tray.
  2. Broil on high for about 10 minutes, or until slightly blackened.
  3. Drain the canned corn.
  4. Dice the peppers, pickled onions, and tomatoes.
  5. Mix all the ingredients together.
  6. Enjoy!
