My Take on my Dad's Chicken Kebab Recipe
Juicy yogurt-marinated chicken with warm spices, a touch of honey, and just enough char from the broiler.

Started doing some improv on my dad's chicken kebab recipe and came up with this today while meal prepping.
Ingredients

- 1 cup 0% plain Greek yogurt
- 2 tbsp extra-virgin olive oil
- 2 tbsp honey
- 2 tsp paprika
- ½ tsp cumin
- ¼ tsp ground cinnamon
- 1 tsp crushed red pepper flakes, plus more for topping
- 2 tbsp fresh lemon juice (about 1 lemon)
- 1 ¾ tsp salt
- ½ tsp freshly ground black pepper
- 5 cloves garlic, minced
- 1 ½ to 2 lbs boneless skinless chicken thighs, trimmed and cut into 1½-inch pieces
- ¼ cup fresh cilantro, chopped
Instructions
- In a large bowl, mix together the yogurt, olive oil, honey, paprika, cumin, cinnamon, red pepper flakes, lemon juice, salt, pepper, cilantro, and garlic until combined.
- Add the chicken pieces and toss to coat thoroughly.
- Cover and refrigerate for at least 20 minutes (or overnight if you're prepared like that).
- When ready to cook, preheat the oven to 425°F. Line a baking sheet with foil.
Don't make the mistake that I made and mindlessly opt to use parchment paper instead of aluminium foil! It can catch on fire if it gets too hot during the broil step! - Arrange the chicken in a single layer on the prepared baking sheet. Sprinkle some extra red pepper flakes on top. (I was too lazy to get skewers for this)
- Bake for 18 minutes.
- Switch the oven to broil and cook for a few more minutes, until some pieces have a little char on the edges.
