My Take on my Dad's Chicken Kebab Recipe

Started doing some improv on my dad's chicken kebab recipe and came up with this today while meal prepping.

  • 1 cup 0% plain Greek yogurt
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp honey
  • 2 tsp paprika
  • ½ tsp cumin
  • ¼ tsp ground cinnamon
  • 1 tsp crushed red pepper flakes, plus more for topping
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1 ¾ tsp salt
  • ½ tsp freshly ground black pepper
  • 5 cloves garlic, minced
  • 1 ½ to 2 lbs boneless skinless chicken thighs, trimmed and cut into 1½-inch pieces
  • ¼ cup fresh cilantro, chopped

Instructions

  1. In a large bowl, mix together the yogurt, olive oil, honey, paprika, cumin, cinnamon, red pepper flakes, lemon juice, salt, pepper, cilantro, and garlic until combined.
  2. Add the chicken pieces and toss to coat thoroughly.

  1. Cover and refrigerate for at least 20 minutes (or overnight if you're prepared like that).
  2. When ready to cook, preheat the oven to 425°F. Line a baking sheet with foil.
    Don't make the mistake that I made and mindlessly opt to use parchment paper instead of aluminium foil! It can catch on fire if it gets too hot during the broil step!
  3. Arrange the chicken in a single layer on the prepared baking sheet. Sprinkle some extra red pepper flakes on top. (I was too lazy to get skewers for this)

  1. Bake for 18 minutes.
  2. Switch the oven to broil and cook for a few more minutes, until some pieces have a little char on the edges.
  3. Enjoy!
